It’s probably “eat now or at best within an hour”. Helps if doused with lemon or something.
The rice paper can get a little soggy and the noodles turn kind of hard/chewy like refrigerated rice. Still edible but definitely much better at room temperature and eaten within a few hours.

You can substitute the ingredients with anything you want.
The sudden crunchy textures of seeds with the chewy rice paper is off-putting.
I’m a texture person too, so certain textures turn me off so I can understand why you might not like that combination.
