    Sweet potatoes. So yummy, just baked with butter and salt. I’m not sure why we don’t have them as a side more often.

      I’m the exact opposite with sweet potatoes. I always forget that I don’t like them. I want to like them so badly, I mean come on, bright orange mashed potatoes! But Everytime I try to eat one I just can’t finish it. It’s weird .

        Same here. I think they’re just too sweet for me, somehow? Which is odd, because I’ll eat things like acorn squash which get kinda sweet when cooked. ::shrug::

        Preheat oven to 425°F/218°C

        Wash and peel a sweet potato or two. Cut into round slices ~1/2" thick (you can halve or even quarter these if it’s a real girthy boy). Coat generously with olive oil, salt, black pepper. Arrange slices in a single layer on a baking tray. Bake on bottom rack for like 40-60 minutes until bottoms have developed a rich caramel brown color. Let cool before using a spatula to remove slices from baking tray.

        Use these as a salad topping with apple slices, feta, nuts, kale, cranberry, whatever you want.
