I purchased a brand new Toyota Corolla Hybrid LE this September and I have ~3,600 miles driven so far. My first recommended maintenance is at 5,000 miles. I’m planning to go on a 2,000 mile road trip. My question is will the warranty be invalidated if I miss that recommended maintenance at 5,000 miles?

If you fall under the Special Operating Conditions then technically yes but realistically no.
However I will state that you should be changing your oil at 5,000 Miles maximum regardless and an every oil change before a road trip isn’t a bad idea. It’ll ensure fresh engine oil and that your tire pressures have been properly set for ideal fuel economy and wear.
