The broth can vary in colour, heat and flavour, depending on preferences, and for larger dishes it’s sometimes seved in metal over an open flame to keep warm and stop the oil from congealing.

It’s a Sichuan dish, but recreated the country over. The broth can vary in colour, heat and flavour, depending on preferences, and for larger dishes it’s sometimes seved in metal over an open flame to keep warm and stop the oil from congealing.
