I’m replacing my intake manifold on my small block Chevy 350 and on all the video tutorials I have seen, They say not to use this wall type of gasket and just lay RTV on the surface on the front and back of the engine but on all their examples the sealed surface is smooth and on my engine it has these holes in it. Do I still need to use the gasket or is RTV enough?

You don’t need to put sealer in the holes.
Some high remp Rtv will work fine. Just make sure the surface prep is done right. Clean and dry 🤌
RTV will be fine. Just clean out the holes real well and then apply a nice even bead, pay attention at the corners just like you would using the gasket.
